Strawberry, feta & mint salad

9 oz strawberries, hulled and sliced in half or thirds 2 Lebanese cucumbers, halved lengthways and sliced into chunky half moons 5½ oz feta, cubed 3 radishes, halved and thinly sliced handful of mint leaves, plus extra to serve

Herb oil dressing

2 handfuls of mint leaves2 handfuls of basil leaves¼ cup olive oilsalt and pepper1 tbsp white wine vinegar

Serves 4-6 as a side

To make the dressing, bring a small saucepan of water to a slow boil. Blanch the herb leaves for 5–10 seconds, then swiftly drain and transfer to a bowl of icy-cold water or run under a cold tap until completely cool. Transfer the leaves to a blender with the remaining dressing ingredients. Whiz together, adding a splash of water if needed to get things moving and blend until well combined.

Taste and ensure some saltiness and tartness are coming through, adding extra salt and pepper to taste.

Just before serving, combine the salad ingredients in a serving dish. Drizzle over the dressing and scatter with extra mint leaves. Serve immediately.
