Pink oysters are strikingly beautiful, and produce flower-like bouquets of overlapping fruits. They are stunningly pink when they’re young, but start to whiten with age. They produce small but very meaty fruits and prefer warmer temperatures and high humidity. A great choice for the summer months.
Golden or yellow oysters will produce a higher number of fruits that are noticeably smaller than the other strains. They are thin and much more brittle than the blue or pink oysters. They start off vibrantly yellow, slowly fading as they mature. Generally, yellow oysters have a short shelf life so its best to eat them right after you harvest. Similar to pink oyster mushrooms, yellows thrive in warmer temperatures as well but you’ll have no trouble growing them year-round.
