Ingredients 2 cups vegetable oil 10 chicken wings, halved 1½ oz unsalted butter 5 fl oz Valentina, Botanera, Tapatio, Cholula or Buffalo Hot Sauce 5 fl oz tomato ketchup pinch of garlic powder 1 tablespoon white vinegar 1 tablespoon Worcestershire sauce

1. Heat the oil in a very large heavy-based saucepan over medium–high heat to 320°F on a kitchen thermometer.
2. Add the wings to the hot oil and cook, turning occasionally, for 5 minutes, then reduce the heat to 265°F and continue to cook for 20 minutes or until they are dark golden and very crisp.
3. Using a slotted spoon, remove the wings and transfer to a tray lined with paper towel to drain.
4. Melt the butter in a large frying pan over medium–low heat, add the hot sauce, tomato ketchup, garlic powder, white vinegar, and Worcestershire sauce and stir for 2–3 minutes, until the sauce turns dark red.
5. Add the wings to the pan and stir to coat in the sauce. Season with a tiny pinch of salt, then remove from the heat and transfer to a large serving plate. Squeeze over the lime juice and serve with cold beer!
